The Story

Flavours of rhubarb and strawberry. Tart, sour. We used a natural souring method, whereby we create overnight conditions favourable to bacteria naturally occurring on grain. Because there are multiple strains of bacteria involved in this process, the resulting sourness is much more complex and interesting than a typical kettle sour.
